Chocolate Bourbon Mini Cheesecakes

A simple and delicious dessert to ring in the new year or anytime you are looking for a little indulgence. The bourbon is optional and easy to omit to make these rich chocolatey treats too.

12 mini cheesecakes. (Muffin Cup size), Bake time 35 Minutes

Ingredients

  • 12 each muffin cup liners
  • Muffin tin

Chocolate crust

  • 3/4 cups vanilla wafer crumbs (about 25 wafers, crushed)
  • 3 tablespoons Cocoa powder
  • 3 tablespoons powdered sugar  
  • 3 tablespoons melted butter

Filling

  • 1/4 cup Cocoa powder
  • 1/8 cup butter (1/4 stick), melted
  • 1.5 packages cream cheese (8 oz. each), softened (12 oz total)
  • 1/2 can sweetened condensed milk (not evaporated milk) (7 oz.)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon bourbon (optional)

Chocolate ganache

  • 1 cup Semi-Sweet Chocolate Chips
  • 1/2 cup heavy whipping cream and
  • 1 teaspoon vanilla extract
  • 1 teaspoon bourbon (optional)
  • Cherries to garnish (optional)

Directions

Chocolate cookie crust

  1. Stir together 3/4 cups vanilla wafer crumbs (about 25 wafers, crushed), 6 tablespoons Cocoa powder, 6 tablespoons powdered sugar and 6 tablespoons melted butter or margarine in medium bowl, set aside

Filling

  1. Heat oven to 300°F. Line muffin cups (2-1/2 inches in diameter) with paper bake cups or spray with nonstick cooking spray.
  2. Press about 1 tablespoonful Chocolate cookie crust mixture onto the bottom of each cup.
  3. Stir together cocoa and 1/4 cup butter. Beat cream cheese until fluffy. Beat in cocoa mixture.
  4. Gradually beat in sweetened condensed milk. Beat in eggs and vanilla (and bourbon if using). Fill muffin cups with batter.
  5. Bake 35 minutes or until set. Cool 15 minutes; remove from pan to wire rack. Cool completely.
  6. Refrigerate. Before serving, spread with chocolate ganache. Allow to set. Top with Cherries if desired. Serve at room temperature.

Chocolate Ganache

  1. Melt 1 cup Semi-Sweet Chocolate Chips with 1/2 cup heavy whipping cream and 1 teaspoon vanilla extract (Plus bourbon if using) in medium saucepan over low heat.
  2. Stir until smooth. Use immediately. Makes about 1 cup of ganache.
