It’s national picnic day! Spend the afternoon outdoors with these delicious recipes that all have a pick-your-own component based on what you, your family, and friends like.

Mason Jar Strawberry Shortcake

Layered in a sealed mason jar, this dessert travels beautifully and is mess-free, making it the ultimate sweet treat for any outdoor adventure. (Serves 4)

Ingredients

  • 1 pint fresh berries or favorite fruit, you pick!
  • 2 tbsp sugar
  • 1 ½ cups heavy whipping cream
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract
  • 2 tablespoon instant vanilla pudding
  • 4 shortcake biscuits (store-bought or homemade)
  • 4, 16 oz (2 cup) mason jars with lids

Directions

In a bowl, toss fruit with sugar. Let sit for 10–15 minutes to macerate.

In a cold bowl, whip heavy cream, until soft peaks form. Add in the powdered sugar, instant vanilla pudding and vanilla, whip until stiff peaks form. (The pudding helps stabilize the whipped cream to have it last longer.

Crumble 1 shortcake biscuit into the bottom of each mason jar.

Layer with strawberries and whipped cream. Repeat biscuit-strawberry-cream layers.

Top with a dollop of whipped cream. Seal with lids and refrigerate until ready to serve.

Lemon-Herb Chicken Wraps

Makes 4 Wraps

Fresh, flavorful, and handheld, this wrap is ideal for outdoor dining—no utensils required and no sogginess in sight.

Ingredients

  • 2 cooked chicken breasts, sliced
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • ½ tsp dried oregano
  • Salt and pepper to taste
  • 4 flour tortillas or wraps
  • 2 cups spring mix greens
  • 1 cup vegetable of choice. (thinly sliced cucumber, sweet peppers strips, shredded carrots, etc.)
  • ¼ cup feta cheese
  • ½ cup hummus

Directions

In a bowl, whisk olive oil, lemon juice, mustard, garlic, oregano, salt & pepper. Toss with sliced chicken. Set aside.

Make the spread. In another small bowl combine the feta and hummus and stir to combine.

Lay out wraps. Spoon and spread about 2 tablespoons of the Hummus/Feta spread. Add spring mix, cut vegetable choice, and marinated chicken slices.

Fold and roll into wraps. Slice in half and wrap in parchment or foil for transport.


 

 

 

 

 

 

 

Fun-Dip Fruit Salad with a Honey Lime Dip

Makes 8 skewers

These colorful, kid-friendly fruit fun dips are hydrating, refreshing, and easy to grab-and-go for sunny days in the park.

Ingredients

  • 1 cup strawberries, halved
  • 1 cup cantaloupe or watermelon, cubed
  • 1 cup pineapple chunks
  • 1 cup green or red grapes
  • 8 skewers or Lollipop sticks (recommended for younger kids as a safer alternative to the sharp wooden skewers)
  • ½ cup honey
  • Zest of 1 lime
  • 1 tbsp lime juice
  • Pinch of salt, Tajin (chili-lime salt), or Chili powder (optional)

Directions

Combine fruit in small bowls or sealable bags along with small skewers.

In a small bowl, mix honey, lime zest, lime juice, and seasoning.

Pack and serve dip in small containers on the side for dipping.

Enjoy at your “Pick-nic” by using the skewer and dipping the fruit into the dip.
