Street Corn Dip (Elote-Inspired)
Serves 4-6
Ingredients
- 4 ears corn, husked (or 3 cups frozen corn, thawed)
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 1/2 cup crumbled cotija cheese (plus more for topping)
- 1 clove garlic, minced
- Juice of 1 lime
- 1 tsp chili lime powder (like Tajin)
- 2 green onions, finely chopped
- 2 tbsp chopped fresh cilantro
- Salt and pepper to taste
- Optional: Hot sauce for drizzling
- Tortilla chips or grilled bread for serving
Directions
Grill corn over medium-high heat, turning occasionally until lightly charred (8–10 min). Let cool, then cut kernels off.
Mix mayo, sour cream, lime juice, garlic, chili powder, salt, and pepper in a bowl. Fold in corn, green onions, cilantro, and cotija cheese.
Serve warm or chilled with extra toppings.
Tips:
- Frozen roasted corn works great as a shortcut.
- Add diced jalapeño for heat.
- Make ahead for best flavor.
Grilled Potato & Herb Salad (No Mayo)
Serves 4-6
Ingredients
- 2 lbs baby potatoes
- 3 tbsp olive oil (plus more for grilling)
- 2 tbsp Dijon mustard
- 1 tbsp white wine vinegar or lemon juice
- 1 small shallot, finely chopped
- 1/4 cup chopped fresh parsley
- 2 tbsp chopped fresh dill
- 2 tbsp chopped chives
- Salt and pepper to taste
Directions
Boil potatoes in salted water until fork-tender (10–12 min). Drain and cool.
Smash slightly with a glass bottom. Brush with olive oil, grill 3–5 min per side until crispy.
Whisk Dijon, vinegar, olive oil, shallots, salt, and pepper. Toss grilled potatoes with dressing and herbs.
Tips
- Use a grill pan for easier handling.
- Delicious warm or room temp.
- Add feta or olives for a twist.
Mini Hamburger Sliders on a Stick
Serves 4-6
Ingredients
- 1 lb ground beef or turkey
- 1 tsp Worcestershire sauce
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 12 cheddar cubes or cheese slices
- 12 pickle chips
- 12 cherry tomatoes
- Lettuce pieces
- Optional: Slider buns or pretzel bites (quartered)
- Skewers or long toothpicks
Directions
Preheat grill or grill pan. Mix beef with seasoning, form 12 mini patties.
Grill 2–3 min per side until done. Let rest.
Skewer tomato, pickle, cheese, lettuce, and patty. Add bun if using. Serve warm with sauces.
