Ham & Cheese Breakfast Pizza

Makes 10 mini pizzas

Ingredients for Pizza Dough

  • 3 cups flour
  • 2 1/4 teaspoons or 1 envelope of fast rising yeast
  • 1 teaspoon honey
  • 1 teaspoon salt
  • 1 cup very warm water (105-115 degrees)
  • 1 tablespoon olive oil

Ingredients for Pizza 

  • 1 package Canadian bacon (chopped)
  • 8 large eggs
  • 1/2 Cup Milk
  • Shredded mozzarella cheese
  • Salt and pepper
 

Directions

  1. Preheat oven to 425 degrees.
  2. Fill liquid measuring cup with 1 cup hot water should be at 120 degrees.
  3. Place yeast and honey in water and stir. Let the yeast mixture sit for 3-5 minutes until it has reached a 1-inch head of foam.
  4. Pour yeast/water mixture into a bowl with flour.
  5. Stir with spoon until shaggy.
  6. With hands, knead and work the dough until all ingredients have come together.
  7. Take dough out of bowl and knead for 5-7 minutes until smooth.
  8. Place dough in an oiled bowl.
  9. Cover bowl with warm wet towel and set aside for 30 minutes or until doubled in size.
  10. Once doubled, divide the dough into 10 pieces.
  11. Roll out the individual dough pieces to flatten them, making mini pizza crusts.
  12. Scramble the eggs and milk in a separate pan until they are soft-set, don’t overcook or they will become dry and rubbery while in the oven.
  13. Top each flattened pizza crust with semi-cooked egg mixture, chopped Canadian bacon, and mozzarella cheese.
  14. Place in the oven and cook 10-12 minutes, wait for the cheese to become bubbly and the edges of the dough to brown.
  15. Sprinkle with salt and pepper
