Ham & Cheese Breakfast Pizza
Makes 10 mini pizzas
Ingredients for Pizza Dough
- 3 cups flour
- 2 1/4 teaspoons or 1 envelope of fast rising yeast
- 1 teaspoon honey
- 1 teaspoon salt
- 1 cup very warm water (105-115 degrees)
- 1 tablespoon olive oil
Ingredients for Pizza
- 1 package Canadian bacon (chopped)
- 8 large eggs
- 1/2 Cup Milk
- Shredded mozzarella cheese
- Salt and pepper
Directions
- Preheat oven to 425 degrees.
- Fill liquid measuring cup with 1 cup hot water should be at 120 degrees.
- Place yeast and honey in water and stir. Let the yeast mixture sit for 3-5 minutes until it has reached a 1-inch head of foam.
- Pour yeast/water mixture into a bowl with flour.
- Stir with spoon until shaggy.
- With hands, knead and work the dough until all ingredients have come together.
- Take dough out of bowl and knead for 5-7 minutes until smooth.
- Place dough in an oiled bowl.
- Cover bowl with warm wet towel and set aside for 30 minutes or until doubled in size.
- Once doubled, divide the dough into 10 pieces.
- Roll out the individual dough pieces to flatten them, making mini pizza crusts.
- Scramble the eggs and milk in a separate pan until they are soft-set, don’t overcook or they will become dry and rubbery while in the oven.
- Top each flattened pizza crust with semi-cooked egg mixture, chopped Canadian bacon, and mozzarella cheese.
- Place in the oven and cook 10-12 minutes, wait for the cheese to become bubbly and the edges of the dough to brown.
- Sprinkle with salt and pepper
