Summer Snacks for Kids

Busy summers can be a struggle to keep kids fed with healthy snacks that are filling but don’t require a ton of prep time. We’ve come up with some fun and delicious summer snacks for kids that they can either make themselves or with a little help from an adult. Check out the recipes below!

Sweet Potato Pancake Bites

Makes About 24 Pancakes | Total Time: 25 minutes


  • 1 cup leftover mashed sweet potatoes
  • 2 large eggs
  • ½ cup milk
  • 2 tablespoons light brown sugar
  • 1 tablespoon Maple syrup plus more for serving
  • ¾ cup all-purpose flour (Or ½ cup flour and ¼ cup protein powder)
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • Pinch of nutmeg
  • 2 tablespoons melted butter plus more for cooking


  1. Place mashed sweet potato puree in a large bowl. Add eggs, milk, brown sugar and maple syrup and whisk until combined.
  2. Sprinkle flour, cinnamon, baking powder, salt and nutmeg on top of the sweet potato mixture and stir until smooth. Add melted butter and mix until combined. 
  3. Set a large nonstick skillet over medium heat and add a small pat of butter. Once melted, drop 2 tablespoon portions of the sweet potato batter onto the preheated skillet. Cook until bubbles form on the top of the pancake, 2 to 4 minutes, then flip and cook for an additional 2 to 3 minutes. Repeat process until all of the batter has been used.
  4. Serve warm with maple syrup. Enjoy!

Hummus Poppers

Makes 12 Poppers


  • 12 small sweet bell peppers
  • 12 tablespoons hummus flavor of your choice
  • ¼ cup Feta cheese crumbles (optional)


  1. Remove the tops of the peppers and scoop out the seeds to create a small cone.
  2. Pipe or spoon about 1 tablespoon of hummus into the peppers.
  3. Top with feta cheese (optional)
  4. Chill until ready to serve.

Pizza Snack Sticks

Makes 12 Snack Sticks


  • 6 Mozzarella string cheese sticks cut into 4ths (24 pieces total)

  • 24 pepperoni slices

  • 24 Garlic pizza puffs (Recipe Below)

  • 12 Lolli sticks or skewers


  1. Place the string cheese pieces, pepperonis, and garlic puffs alternating on sticks.

  2. Chill until ready to serve.


Garlic Pizza Puffs


  • 1 ½ cups flour
  • ½ cup hot water
  • 1 tablespoon olive oil
  • 1 teaspoon yeast
  • 1 teaspoon sugar
  • 8 Tablespoons butter, melted (1 stick)
  • 1 teaspoon garlic salt



  1. Fill liquid measuring cup with 1/2 cup hot water should be at about 115-120 degrees. Place yeast and sugar in water and stir. Add in olive oil and stir. Let the yeast mixture sit for 3-5 minutes until it has reached a 1-inch head of foam.

  2. Pour yeast/water mixture into a bowl with the flour. Stir with spoon until shaggy.

  3. With hands, knead and work the dough until all ingredients have come together. Take dough out of bowl and knead for 5-7 minutes until smooth.

  4. Place dough in an oiled bowl. Cover bowl with warm wet towel and set aside for 30 minutes or until doubled in size.

  5. Once doubled, roll out the dough into a long log. Divide into 24 pieces.

  6. Roll each piece into a small ball, set aside.

  7. Combine the melted butter and garlic salt in a large bowl. Add in the dough balls and coat in butter mixture.

  8. Place the dough balls on parchment and lightly greased baking sheet. Bake at 4425 for 12-12 minutes until lightly golden brown.

  9. Remove the pizza puffs from oven and allow to cool slightly before using on Pizza Snack Sticks (recipe above).
