Happy Chocolate Eclair Day

MINI CHOCOLATE ÉCLAIRS  

PREP TIME: 90 MINUTES COOK TIME: 35 MINUTES TOTAL TIME: 125 MINUTES 
Yield: Approx. 24 mini eclairs 

INGREDIENTS 

--- Vanilla Pudding Filling --- Or Substitute with Instant Vanilla Pudding

 1/4 cup (56 g) sugar
 2 tablespoons (30 g) cornstarch
 1/4 teaspoon salt
 2 cups (472 ml) milk
 2 large egg yolks, beaten, in medium bowl
 1 tablespoon butter
 1 teaspoon vanilla

Spring Pesto Pasta Salad

In a lot of ways we are like any other kitchen; Monday rolls around and we take a look at what's left over in our fridge and wonder what on earth to make with what's left over. 

Today is one of those days. I love looking at any meal time as a fun challenge to see how many things I cam create with what's on hand. Today we had some radishes and cavatappi pasta to use and my new favorite way to eat radishes is sauteed in a little olive. Cooking radishes helps bring out their sweetness. Here is my recipe for a Spring Pesto Pasta Salad with sauteed radishes and leeks. Enjoy.

No Dirty Dishes Day!

We/re glad we are not the only ones who somedays just want a break from doing the dishes!
That's why we cuoldn't be happier to celebrate "No Dirty Dishes" day with this great recipe for foil wrapped (AKA easy clean up) Salmon with Lemon and dill. 

 

Salmon with Lemon & Dill Foiled Dinner

 Ingredients

• 1 small leek (about 3 small ones),

• 1/2 tbsp chopped dill, plus 1 tsp

• 1 skinless salmon fillets

• ½ lemon, grated zest of ¼, plus a good squeeze of juice

• 2-3 tsp capers

• 1 sheet of foil about 12" X12"
